This isnt specifically Hawaiian cuisine, but it is a local favorite and man are they good.  Very easy to make and very gratifying.  The ingredients and cooking are very simple and yeild a good amount of product.


 


Sata Andagi (Okinawan Doughnuts)


 


Salad oil for deep frying


4 eggs


3/4 cup milk


3/4 teaspoon vanilla


4 cups flour


2 cups sugar


3 1/2 tablespoons baking powder


1/4 teaspoon salt


 


 


In a skillet, heat oil to 350 F. In a large bowl, beat eggs, milk, and vanilla. Sift flour, sugar, baking powder and salt. Add to egg mixture; stir until dry ingredients are moistened and dough is smooth. Drop teaspoonfuls of dough into the hot oil; fry until golden brown and doughnuts rise to the surface. Makes 4 dozen.


 


In addition I reccommend lightly sprinkling some sifted powdered sugar(confectioners sugar) over them.  I say sifted because unsifted confectioners sugar tends to be clumpy and will not go on as lightly.  You do not need a sifter to sift with(no need go out and buy something you dont really need.)  You can use a wire wisp or a fork to sift with, it does not work as well, but is better than nothing.  I really reccommend a wire wisp because a fork isnt as fine an instrument.

Read a little more slowly next time it tells you at the end.  The recipe makes 4 dozen.
