First off you have to have a minimum of 2 eggs.  Then a Teflon skillet with canola oil.  I personally prefer a griddle with some veggie oil or butter.  Finding the exact right temperature for each oven and griddle is going to take multiple tries.  After you have finally gotten your prefect temp, you evenly smooth the egg across the cooking surface with a metal spatula(platic will work but egg catches on plastic utensils easy I find).  When the side up(the side you see) is dry thats when you throw on your contents and spread it even up and down the length of egg.(The drying will occur rather quickly so have your contents ready).  Once you have spread your contents even you fold one side over to the other and then reach under the egg where the contents lie and fold the omellette over and over till it is shapped like a crepe'.  From there how long you cook it is up to how well you want the contents cooked.  Just ensure to keep rotating it on its sides so that the egg and contents will cook evenly.

Any questions?
